Ingredients

  • 300 g green beans
  • 1 tbsp olive oil
  • 2 tbsp butter
  • 1¼ tsp salt
  • ¼ tsp cracked black pepper
  • 4 garlic cloves
  • juice of half lemon

Method

Step 1

Trim the ends of green beans. Keep water to boil in a pot. Add beans and 1 tsp salt in a hot water. Keep heat on medium high and let beans cook for 3 min.

Step 2

Drain the water and combine beans with ice cold water and cool them down to stop beans from further cooking. Remove beans from cold water and pat dry with kitchen towel or clean cloth.

Step 3

In skillet, heat 1 tbsp olive oil and 2 tbsp butter. Once butter melts, add 4 minced garlic cloves in skillet and sauté for 30 sec. Add green beans in skillet and sauté for 1 min. Add 1/4 tsp salt and 1/4 tsp black pepper and sauté on medium heat for 3 min or until garlic is golden and fragrant.

Step 4

Transfer beans to serving dish and squeeze lemon juice on top of it. Serve warm.

Tips:

  • If you don’t want to use butter, you can just use olive oil.
  • Blanching the green beans helps to preserve bright green color and flavor. You can skip blanching the green beans but they can turn little bit crispier without blanch.
  • You can also use cream instead of milk.
  • You can add herbs of your choice to give an extra flavour.
