Chicken Fried Rice

Ingredients
- 250 gm boneless chicken (cut into small pieces)
- 1 cup basmati rice
- 4 green onions
- 1 capsicum
- 1 carrot
- 2 eggs
- 1 tbsp chopped garlic
- 1 tbsp corn flour
- 1.5 tsp red chilli sauce
- 1.5 tsp soy sauce
- 1 tsp vinegar
- 1 tsp black pepper powder
- 1 tsp salt
- 1 tsp sesame oil
- 3 tbsp cooking oil
Method
Step 1
Take 1 cup basmati rice and wash it well. Soak it in water for 15-20 min. Drain the water after 20 min and put soaked rice in cooker. Add 1.5 cup fresh water in it. Add 1 tsp salt in rice and close the lid.
Step 2
Heat the rice on medium flame till first whistle. Turn off the heat and keep pressure cooker aside for 5 min. Remove the rice from cooker and spread it on a tray or a big plate. Let rice cool down.
Step 3
Take 250 gm boneless chicken in mixing bowl. Add 1 tsp salt, 1 tsp black pepper powder, 1 tsp soy sauce and 1 tsp corn flour. Mix everything well with boneless chicken. Let chicken marinate for 10 min.
Step 4
Add 2 tbsp oil in frying pan. Add marinated chicken in it and fry chicken for around 10 min. Take chicken pieces out of pan keep it aside. Let oil be in the pan.
Step 5
Beat 2 eggs in a bowl and add those beaten eggs in pan. Spread it in the pan gently with light hand. Use spatula and keep stirring to make scrambled eggs. Do not overcook it. Switch off the heat once scrambled eggs are ready.
Step 6
Preheat kadai/wok for 2-3 minutes. Keep heat on medium high. Add 1 tbsp oil in kadai. Once oil is hot, add 1 tbsp chopped garlic it. Light fry garlic for 1 min. Chop the white part of 4 spring onions (spring onion whites) and add it in kadai followed by 1 chopped carrot and 1 chopped capsicum. Stir fry for 1-2 min.
Step 7
Now add 1 tsp red chilli sauce, 1 tsp soy sauce and 1 tsp black pepper in kadai. Add 4 chopped spring onions. Mix it well with all veggies. Add marinated chicken and scrambled eggs in kadai. Add 1 tsp vinegar in it and mix well.
Step 8
Add boiled rice in the kadai. Mix rice well with all ingredients without breaking the rice. Let the rice cook for 5-6 min. Keep it stirring in between. Add chopped spring onion in rice. Add 1 tsp sesame oil and stir it well. Turn off the heat once rice is hot.
Chicken fried rice is ready, serve it hot.
